I made an appetizer that was very light, yet filling. Total contradiction? Well, there are not any other words to describe it. Unfortunately, I ran out of balsamic vinegar, which is what I use to mix with the olive oil to add more flavor, but the cucumber noodles still tasted nice.
- 1 cucumber
- olive oil spray
- ground black pepper
- mint leaves
- Cut off both ends of the cucumber, then peel off the outer skin.
- Using a julienne peeler, create long strands from the cucumber.
- Use the olive oil spray to lightly coat the noodles. Mix well.
- Sprinkle ground black pepper, then the mint leaves over the noodles.
