Have you ever felt full before the main course arrived? You won’t experience that with these zucchini wraps! They are light, yet nutritionally packed. You can eat two, three, or more of these without shame.
- 1 zucchini
- 6-8 cherry tomatoes
- feta cheese
- salt and pepper
- Use a mandoline to create thin zucchini slices.
- Season the slices with salt and pepper, then place them on a lightly greased grill pan. Grill each side for 4-6 minutes on medium high heat or until grill marks develop.
- Remove the slices from the pan and place them on a plate.
- Place 1 cherry tomato on the end of the zucchini and roll up.
- Poke a toothpick through the zucchini and cherry tomato.
- Sprinkle feta cheese into one side of the wrap.
